Courgette Noodles with Pesto & Tomato
This simple dish is great for a quick healthy lunch. You can add feta cheese, seeds, nuts, chickpeas, marinated tofu, hard boiled egg, chicken breast or turkey to make it more substantial. Cauliflower Chicken Alfredo with Courgette Noodles
This is an unusual twist on alfredo sauce which pasta lovers will know is traditionally made with cream and cheese. I tried this out on my other half who is not a health conscious nutritionist and he really liked it!
One of the ingredients is nutritional yeast, which has become a staple in my food cupboard. I mentioned it in my last newsletter. It’s a very healthy vegan food which has a natural cheesy flavour. It’s much lower in calories than proper cheese but contains pure ingredients unlike some other so called vegan “cheeses”. If you can handle the extra calories, by all means add a handful of real cheese into this recipe as well! View and download the recipe here

Taking only 15 minutes to prepare, this is a lovely mix of flavours. Sweet potato noodles are combined with spinach, sweetcorn, coriander, olive oil, garlic, chilli and lime.
